Ingredients

  • 500 g sirloin or ribeye
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 pear or apple
  • 4 cloves garlic
  • 3 tbsp sesame oil
  • 1 tsp black pepper
  • 200 g spinach
  • 2 carrots
  • 200 g beansprouts
  • 150 g shiitake mushrooms
  • 1 courgette
  • 2 tbsp sesame seeds
  • 4 eggs
  • 4 servings short-grain rice
  • 3 tbsp gochujang
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp water
  • Neutral oil and salt, for cooking

Instructions

  1. 1Put the beef in the freezer for 30 minutes. Firm meat slices far thinner than soft meat, and thin slices are what keep bulgogi tender.
  2. 2Meanwhile, peel and grate the pear and grate the garlic. Mix them in a bowl with the soy sauce, brown sugar, 1 tbsp of the sesame oil and the black pepper.
  3. 3Take the beef out and slice it against the grain as thinly as you can manage. Add it to the marinade, turn to coat, and leave for at least 20 minutes — or overnight in the fridge.
  4. 4Make the sauce: whisk the gochujang, rice vinegar, honey, water and 1 tbsp of the sesame oil together until it pours. Set it aside.
  5. 5Cut the carrots and the courgette into matchsticks and slice the mushrooms.
  6. 6Bring a pan of water to the boil. Blanch the spinach for 30 seconds, lift it out, squeeze it dry hard with your hands, and toss it with a little sesame oil, salt and sesame seeds.
  7. 7Blanch the beansprouts in the same water for 2 minutes and dress them the same way.
  8. 8Stir-fry the carrot, courgette and mushrooms separately in a little oil, seasoning each with a pinch of salt as it comes out of the pan. Cooking them one at a time is what keeps each distinct in the finished bowl; together they turn into one grey-green tangle.
  9. 9Get a frying pan very hot. Cook the beef in two batches, spread flat, for about 90 seconds a side so it caramelises rather than stews. Crowding the pan is the one mistake that ruins bulgogi.
  10. 10Fry the eggs sunny side up, leaving the yolks liquid.
  11. 11Fill four bowls with rice. Arrange the vegetables and beef in separate sections on top, add an egg to each and spoon over the sauce.
  12. 12Stir everything together vigorously before eating. The mixing is the dish, not an afterthought.

Bibimbap means "mixed rice", and the mixing is not optional. The bowl arrives arranged in neat sections so you can see what you have been given, and then you destroy it with a spoon. Every account of the dish that treats it as a composed plate has missed the point.

Why each vegetable is seasoned on its own

The Korean term is namul: vegetables blanched or fried and then individually dressed, usually with sesame oil, salt and sesame seeds. It looks like unnecessary work compared to throwing everything in one pan.

It is not. Spinach and beansprouts release water and need squeezing; carrots need a hard fast fry; mushrooms need long enough to brown. Cook them together and you get a uniform grey-green tangle. Cook them separately and each keeps its own texture and salt level, which is what makes the mixed bowl taste layered rather than muddled.

You can do all of it in one pan, one vegetable at a time, wiping between. It takes about fifteen minutes total.

The pear in the marinade

Korean marinades commonly use grated Asian pear, and it is doing more than sweetening. Pears contain a protease called calpain that breaks down muscle protein, tenderising thin slices of beef in under half an hour. Apple works and kiwi works too well - leave kiwi more than twenty minutes and the meat turns mushy.

The sugar matters as well. It is what lets the beef caramelise in ninety seconds instead of simply browning, and that caramelisation is most of the flavour.

Slice it thin, cook it fast

Thirty minutes in the freezer firms the beef enough to cut it genuinely thin, which is nearly impossible with a soft piece of meat and a domestic knife. Thin slices cook through before they have time to toughen.

Then cook in batches. Marinated beef carries a lot of liquid, and a crowded pan drops below searing temperature and boils the meat in its own marinade. Two batches, spread flat, ninety seconds a side.

Gochujang, briefly

Gochujang is a fermented paste of chilli, glutinous rice and soybeans. It is savoury and slightly sweet rather than simply hot, and thinning it with vinegar, sesame oil and honey turns it from a paste you cannot distribute into a sauce that coats rice. Brands vary a lot in heat - start with less and add more.

Nutrition

Around 690 calories per bowl with 41 grams of protein. The spread of vegetables does real work here: spinach and carrot for vitamin A and K, beansprouts for folate, and the beef for highly available iron, zinc and B12. Swap the beef for firm tofu marinated the same way and the bowl still holds together.

Leftover namul keeps for three days and makes the second bowl a five-minute job.
